Ingredients
  

  • 3 cups cooked jasmine rice day-old works best
  • 2 cups diced boneless, skinless chicken breast
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 large eggs beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated

Method
 

  1. Prep your ingredients: dice chicken, chop veggies, beat eggs, and measure sauces.
  2. Heat the Blackstone griddle to medium-high and add a tablespoon of vegetable oil.
  3. Add chicken to the griddle and sear for 3-4 minutes until golden brown.
  4. Push chicken to one side and add another tablespoon of oil, then sauté mixed veggies until tender.
  5. Scramble the beaten eggs in a small space on the griddle until fully cooked, then mix with veggies and chicken.
  6. Spread the jasmine rice on the griddle, toast for a minute, then break it up with a spatula.
  7. Drizzle soy sauce, oyster sauce, and sesame oil over the rice, stirring until coated and slightly crispy.
  8. For extra flavor, prepare a sauce of sriracha and honey, and drizzle over the fried rice just before serving.
