Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional for spice)

Equipment

  • Grill or grill pan
  • Tongs
  • Meat thermometer
  • Bowl for marinating
  • Knife and cutting board

Method

  1. Slice the chicken breasts into bite-sized pieces.
  2. In a bowl, whisk together the olive oil, lemon juice, garlic, salt, pepper, paprika, onion powder, thyme, and cayenne pepper.
  3. Add the chicken pieces to the marinade, ensuring they’re fully coated, and cover the bowl.
  4. Let it sit in the fridge for at least 2 hours—or overnight for maximum flavor.
  5. Preheat your grill to medium-high heat or use a grill pan/skillet.
  6. Ensure the grilling surface is lightly oiled to prevent sticking.
  7. Place the chicken pieces on the grill and cook for about 3-4 minutes per side, or until they reach an internal temperature of 165°F.
  8. Once cooked, transfer the nuggets to a plate and let them rest for a few minutes before serving.

Notes

For an extra burst of flavor, sprinkle a dash of smoked paprika on the nuggets after grilling. Leftovers can be stored in an airtight container in the fridge for up to 3 days; reheat gently in a skillet to retain moisture. For longer storage, freeze the cooked nuggets in a single layer on a baking sheet before transferring them to a freezer-safe bag; they’ll keep for up to 3 months. You can also freeze the raw marinated chicken for future use; just let it thaw completely before cooking.
