Ingredients
  

  • 500 g boneless, skinless chicken breast or thighs
  • 2 cups fresh vegetables bell peppers, broccoli, carrots, snap peas, mushrooms
  • 2 cups cooked jasmine or basmati rice preferably day-old
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon sesame oil
  • optional add-ins cashews, water chestnuts, green onions

Method
 

  1. Cook the rice ahead of time and let it cool.
  2. Marinade the chicken in soy sauce, garlic, ginger, and sesame oil for at least 15 minutes.
