Ingredients
  

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 can cream of chicken soup (or alternative like Greek yogurt or coconut milk)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp dried thyme
  • to taste Salt and pepper
  • optional diced carrots, peas, spinach, or other vegetables

Equipment

Method
 

  1. Add chicken to the slow cooker.
  2. Rinse the rice under cold water and add it to the slow cooker.
  3. Pour in the chicken broth and cream of chicken soup.
  4. Sprinkle garlic powder, onion powder, paprika, thyme, and salt and pepper over the mixture.
  5. Stir gently to combine, being careful not to stir the rice too much to prevent mushiness.
  6. Cover and cook on low for 4-6 hours.
  7. Before serving, check the rice for doneness and adjust seasoning if needed.
