  • 2 large eggs beaten for egg wash
  • 1/2 cup almond flour
  • 1/2 cup grated Parmesan cheese

  • 1 cup marinara sauce
  • 1 1/2 cups shredded mozzarella cheese

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Pat chicken breasts dry and season with salt, pepper, garlic powder, paprika, and Italian seasoning.
  3. Dip each chicken breast into the beaten eggs, allowing excess to drip off.
  4. Coat the chicken in a mixture of almond flour and grated Parmesan, pressing gently to adhere.
  5. Heat olive oil in a large skillet over medium-high heat.
  6. Sear the chicken in hot oil for 3-4 minutes on each side until golden brown.
  7. Transfer the seared chicken to a baking dish.
  8. Top each chicken breast with marinara sauce and sprinkle mozzarella cheese on top.
  9. Bake in the preheated oven for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and cheese is bubbly.
  10. Garnish with fresh basil leaves before serving.
