  • 1 lb Boneless, Skinless Chicken Breasts or Thighs
  • 1 cup Bell Peppers, Sliced
  • 1 cup Onion, Sliced
  • 1 cup Mushrooms, Sliced
  • 1 cup Spinach
  • 1 jar (16 oz) Marinara Sauce or Alfredo Sauce
  • 1 cup Penne or Rigatoni Pasta
  • to taste Salt
  • to taste Pepper
  • to taste Garlic Powder
  • to taste Italian Seasoning

Method
 

  1. Season the chicken with salt, pepper, garlic powder, and Italian seasoning.
  2. Place the seasoned chicken at the bottom of the slow cooker.
  3. Layer bell peppers, onion, mushrooms, and spinach over the chicken.
  4. Pour the sauce over the layered ingredients.
  5. Set the slow cooker on low for 6-8 hours or high for 3-4 hours.
  6. Add the pasta during the last 30-45 minutes of cooking.
  7. Once done, shred the chicken and mix it into the pasta and sauce.
  8. Garnish with fresh parsley or grated Parmesan before serving.
