Ingredients
  

  • 1.5 lbs boneless, skinless chicken thighs or breasts if preferred
  • 1 unit fresh pineapple peeled and cut into chunks
  • 1/4 cup soy sauce
  • 2 tbsp olive oil
  • 2 tbsp brown sugar
  • 2 cloves garlic minced
  • 1 tsp ginger grated
  • 1 unit lime juice of
  • to taste salt
  • to taste pepper

  • Skewers (wooden or metal)
  • Basting brush

  • Knife and cutting board

Method
 

  1. Mix the soy sauce, olive oil, brown sugar, garlic, ginger, lime juice, salt, and pepper in a bowl.
  2. Add the chicken and let it marinate for at least 30 minutes or overnight.
  3. Preheat the grill to medium-high heat and thread the chicken and pineapple onto skewers.
  4. Grill the skewers for about 4-5 minutes per side until cooked through and caramelized.
  5. Remove the skewers from the grill and let them rest for a few minutes before serving.
  6. Garnish with fresh cilantro or a squeeze of lime, and serve alongside rice or salad.

Notes
