  • 4 large Flour tortillas
  • 1 cup Cooked rice
  • 1 cup Black beans canned or cooked
  • 1 cup Shredded cheddar cheese
  • 1 piece Avocado, sliced
  • 1/2 cup Salsa
  • 1/4 cup Sour cream
  • 1/2 cup Chopped lettuce

Method
 

  1. Mix olive oil, cumin, chili powder, garlic powder, salt, and pepper in a bowl. Coat the chicken breasts evenly and let them sit for at least 20 minutes.
  2. Fire up your grill or heat a skillet over medium-high heat. Cook the chicken for about 6-7 minutes per side until golden brown and fully cooked through. Let it rest for a few minutes before slicing it thinly against the grain.
  3. Warm your tortillas on the grill or in a dry skillet for about 30 seconds per side until soft and pliable.
  4. Lay out each tortilla and layer on the rice, beans, grilled chicken, cheese, avocado slices, salsa, sour cream, and lettuce. Roll tightly by folding the sides inward first, then rolling from the bottom up.
