  • 2 boneless, skinless chicken breasts
  • 1 cup fresh mozzarella cheese, sliced
  • 1 large tomato, sliced
  • q.s. fresh basil leaves
  • 3 tablespoons balsamic glaze
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • to taste salt and pepper

Method
 

  1. Marinate the chicken breasts in olive oil, minced garlic, salt, and pepper for at least 30 minutes.
  2. Preheat the grill to medium-high heat.
  3. Grill the marinated chicken for 6-7 minutes on each side, or until fully cooked.
  4. Once the chicken is cooked, layer slices of fresh mozzarella and tomato on top.
  5. Cover the grill for a few minutes until the mozzarella is melted.
  6. Remove from the grill and garnish with fresh basil leaves.
  7. Drizzle balsamic glaze over the top before serving.
