- In a bowl, mix olive oil, lemon juice, minced garlic, paprika, thyme, salt, and pepper. Add the chicken breasts and coat them evenly with the marinade. Let them sit for at least 30 minutes—or overnight for maximum flavor.
- Heat your grill to medium-high heat. Place the chicken breasts on the grill and cook for 6–7 minutes per side, or until the internal temperature reaches 165°F.
- Toast the buns lightly. Spread mayonnaise or your chosen sauce on the bottom half of each bun. Layer lettuce, tomato slices, and pickles, then place the grilled chicken on top. Add a slice of cheese if desired. Top it off with the other half of the bun and serve immediately.
