Ingredients

  • 4 pieces bone-in, skin-on chicken thighs or substitute with legs or wings
  • 3 tablespoons lemon pepper seasoning
  • 2 tablespoons olive oil
  • 2 pieces lemons (juiced)
  • 1 piece lemon (zested)
  • 2 cloves garlic, minced
  • to taste salt
  • to garnish fresh parsley

Equipment

  • Grill
  • Tongs
  • Meat Thermometer
  • Basting Brush
  • Marinating Container or Resealable Bag

Method

  1. In a small bowl, whisk together olive oil, lemon juice, zest, minced garlic, and lemon pepper seasoning. Pour it over the chicken in a resealable bag or dish, ensuring even coating.
  2. Preheat your grill to medium-high heat (375°F to 400°F).
  3. Place the chicken on the grill, skin-side down, and sear for 6-8 minutes until golden brown. Flip and continue cooking for another 10-15 minutes.
  4. Use a meat thermometer to check doneness; it should read 165°F internally. Transfer cooked chicken to a plate and let rest for 5 minutes before garnishing with fresh parsley.

Notes

For deeper flavor, let the chicken marinate overnight. Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months. Revive flavors by sprinkling fresh lemon juice and zest over reheated chicken. Experiment with spices such as thyme or rosemary for added complexity. For a touch of sweetness, drizzle honey over the chicken during the last few minutes of grilling.
