Ingredients
  

  • 2 tablespoons Fresh curry powder
  • 1 tablespoon Garlic and ginger paste
  • 400 ml Coconut milk preferably fresh, but canned works too
  • 1 medium Onion chopped
  • 2 medium Tomatoes chopped
  • 3 stalks Scallions chopped
  • 1 to taste Hot peppers optional, for heat
  • to garnish Cilantro
  • 1 kg Chicken cut into pieces

Method
 

  1. Marinate the chicken with a mix of fresh curry powder, garlic, ginger, and a splash of vinegar or lime juice for at least an hour, or preferably overnight.
  2. Heat oil in a large pot and sauté chopped onions, garlic, and ginger until golden and fragrant.
  3. Add the marinated chicken to the pot and brown it slightly on all sides.
  4. Pour in the coconut milk and let everything simmer gently until the chicken is cooked through.
