- Preheat your oven to 375°F (190°C) or set your air fryer to the same temperature.
- If using chicken breasts, pound them to an even thickness for cooking.
- In a bowl, mix panko crumbs (or almond flour), Parmesan cheese, garlic powder, paprika, and Italian seasoning.
- Whisk the egg whites in a separate bowl until frothy.
- Dip each chicken breast into the egg whites, then coat evenly with the crumb mixture.
- Spray a baking sheet or air fryer basket with olive oil spray and place the coated chicken on it.
- Bake in the oven or air fry for 12-15 minutes, flipping halfway through, until golden brown.
- Remove from heat and top with marinara sauce and shredded mozzarella cheese.
- Return to the oven for an additional 5-7 minutes, until the cheese is melted and bubbly.
- Serve hot with your choice of healthy sides like zoodles or roasted vegetables.
