Ingredients
  

  • 3 tablespoons gochujang
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 splash rice vinegar
  • 500 g chicken thighs cut into bite-sized pieces
  • 2 medium bell peppers chopped
  • 1 medium onion chopped
  • 1 medium zucchini chopped (optional)

Method
 

  1. Preheat your oven to 400°F (about 200°C).
  2. If using wooden skewers, soak them in water for at least 30 minutes.
  3. In a bowl, mix gochujang, honey, soy sauce, garlic powder, and rice vinegar to create the glaze.
  4. Cut the chicken into bite-sized pieces and marinate in part of the glaze for at least 30 minutes (or overnight for best results).
  5. Assemble the kebabs by threading the marinated chicken onto skewers, alternating with veggies like bell peppers and onions.
  6. Place the skewers on a baking sheet lined with parchment paper.
  7. Bake in the oven for about 20-25 minutes, flipping halfway through.
  8. Brush the kebabs with the remaining glaze and pop back into the oven for an additional 2-3 minutes to caramelize.
  9. Serve and enjoy!
