Ingredients
  

  • 1 kg Fresh chicken (bone-in pieces)
  • 4 medium Yams not sweet potatoes
  • 2 medium Carrots
  • 3 medium Potatoes
  • 2 cups Callaloo or spinach
  • 2 cups Dumpling dough (flour, baking powder, salt, water)
  • 1 Scotch bonnet pepper
  • 2 sprigs Fresh thyme
  • 4 stems Scallions
  • 5 cloves Garlic
  • 1 inch Ginger fresh, grated
  • 2 tbsp All-purpose seasoning or mix of salt, black pepper, and paprika

Equipment

  • Large pot
  • Knife
  • Chopping board
  • Mixing bowl

Method
 

  1. Prepare all ingredients by chopping veggies and portioning chicken.
  2. Heat a large pot over medium heat and add a splash of oil.
  3. Brown the chicken pieces on all sides to enhance flavor.
  4. Add chopped scallions, minced garlic, grated ginger, and Scotch bonnet pepper; stir for one minute.
  5. Pour in enough water to cover the chicken; add thyme and all-purpose seasoning.
  6. Bring to a boil, then reduce heat to low and simmer uncovered for 45 minutes.
  7. Add yams, carrots, and potatoes to the pot; let simmer for 15 minutes.
  8. Prepare dumpling dough and form small balls; drop into the soup.
  9. Cook dumplings for 10-12 minutes until they float to the surface.
  10. Stir in callaloo or spinach for the last 5 minutes of cooking.
