- In a large pot, add the chicken, broth, and bring to a boil.
- Reduce heat and simmer for 30 minutes to cook the chicken through.
- Remove chicken, shred the meat from the bones, and return shredded chicken to the pot.
- Add onion, garlic, ginger, thyme, and scallions to the pot, cooking for another 5 minutes.
- Stir in carrots, potatoes, yam, and pumpkin, and simmer for 15 minutes until tender.
- Add the callaloo, noodles, and whole Scotch bonnet peppers; cook for an additional 10 minutes.
- Pour in the coconut milk and stir well. Season with salt and pepper to taste.
- Serve hot with a squeeze of lime juice on top.
