Ingredients
  

  • 2 lbs chicken wings (split into drumettes and flats)
  • 2 tbsp kosher salt
  • 1 tbsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 1 tsp cayenne pepper (optional for heat)
  • 1/4 cup apple cider vinegar
  • BBQ sauce or hot sauce for finishing

Method
 

  1. Pat the wings dry with paper towels.
  2. Toss the wings in a bowl with the salt, pepper, garlic powder, paprika, and cayenne until evenly coated.
  3. Let the wings sit uncovered in the fridge for 1–2 hours to dry out the skin.
  4. Preheat your pellet grill to 225°F.
  5. Spray the grill grates lightly with oil to prevent sticking.
  6. Place the wings on the grill in a single layer without touching.
  7. Smoke the wings for about 1.5 to 2 hours until they achieve a golden color.
  8. Increase the grill temperature to 375°F for the last 10–15 minutes to crisp the skin.
  9. Brush the wings with a mix of BBQ sauce and apple cider vinegar during the last few minutes.
